Method
- 1
Heat half the oil in a frying pan over a medium heat. Cook the onion and pepper for 6 minutes until soft and lightly golden. Tip into a bowl.
6 min - 2
Warm your ready made carnitas (see the base recipe) in the same pan for 4 minutes, then stir in your ready made BBQ sauce (see the base recipe) until the pork is coated and steaming hot.
4 min - 3
Lay 4 tortillas on a board. Cover each with a quarter of the cheese, then the pork, the onion and pepper and the coriander. Top with the rest of the cheese and a second tortilla.
- 4
Wipe the pan and brush with a little of the remaining oil. Cook each quesadilla over a medium heat for 3 minutes per side, pressing down, until golden and the cheese has melted.
3 min - 5
Rest for 1 minute, then cut into wedges with a sharp knife and serve.
Tips
- Medium heat is key. If the pan is too hot the tortilla burns before the cheese melts.
- Keep the filling quite dry. Drain any liquid from the carnitas so the tortillas stay crisp.
- Serve with soured cream or a spoon of guacamole on the side for a cool contrast to the smoky pork.
Storing and freezing
Best eaten fresh. The pork and pepper filling keeps 3 days in the fridge; reheat until steaming hot before filling.
Questions
Can I use leftover roast pork instead?
Yes. About 400 g of shredded leftover roast pork works well. Toss it in the BBQ sauce and warm it through before you fill the tortillas.
Can I bake these instead?
Yes. Place the quesadillas on a lined tray and bake at 220C for 10 to 12 minutes, turning once, until golden and crisp.
Can I make them gluten free?
Use corn tortillas or gluten free wraps instead, and fold them over rather than stacking. Check the label on the cheese for any additives.
