Method

  1. 1

Toss the pork strips with your ready made al pastor marinade (see the base recipe). Cover and chill for at least 2 hours.

  2. 2

Heat 1 tbsp olive oil in a large pan over a medium heat. Cook the onion for 6 minutes until soft, then add the garlic and cumin and cook for 1 minute.

  4. 4

Blend about two thirds of the soup until smooth, then stir it back into the pan. Season with salt and a squeeze of lime. Keep it hot over a low heat.

  5. 5

Heat the remaining oil in a frying pan over a high heat and cook the pork for 3 to 4 minutes, stirring, until crisp at the edges and cooked through.

  6. 6

Ladle the soup into bowls. Top with the crisp pork, avocado and coriander and serve with lime wedges.

Tips

  • Blend only part of the soup. The whole beans give texture against the smooth base.
  • Cook the pork separately so it stays crisp on top rather than softening in the soup.
  • Add a splash of vinegar or lime juice to brighten the soup just before serving.
  • Add a chopped chipotle for smoky heat.

Storing and freezing

Keeps in the fridge for up to 3 days, cooled within 1 to 2 hours. Freeze the soup without the pork for up to 3 months. Reheat until steaming hot all the way through.

Questions

Can I make this vegetarian?
