Method

  1. 1

Warm your ready made Mexican red rice (see the base recipe) in a pan with a splash of water for 5 minutes, covered, until steaming hot all the way through.

    5 min
  2. 2

In another pan, warm your ready made Mexican black beans (see the base recipe) with the cumin for 4 minutes, mashing a few beans to thicken the juices.

    4 min
  3. 3

Toss the avocado slices with the lime juice and a pinch of salt.

  4. 4

Warm your homemade flour tortillas (see the base recipe) in a dry pan for 15 seconds a side.

  5. 5

Layer rice, beans, avocado and lettuce on each tortilla. Fold in the sides and roll up tightly.

  6. 6

Heat the oil in a frying pan and cook the burritos seam side down for 2 minutes, then turn once for 1 minute more until lightly golden.

    3 min

Tips

  • Drain the beans well before filling or the burrito will leak.
  • Mash a third of the beans so they bind the filling together.
  • Add a spoonful of salsa taquera for heat, or of pickled red onions for sharpness.
  • Reheat rice only once and make sure it is steaming hot all the way through.

Storing and freezing

Wrap and keep in the fridge for up to 2 days, or freeze without the avocado and lettuce for up to 2 months. Reheat until steaming hot all the way through.

Questions

Is this burrito vegan?

Yes, as long as your rice and beans are made with vegetable stock or water. All of the base recipes used here are vegan, and the filling contains no animal products.

Can I use brown rice?

Yes. Brown rice has a nuttier taste and chewier texture. Make sure it is fully cooked and cooled quickly if not eaten straight away.

Can I freeze the burritos?

Yes, but leave out the avocado and lettuce, which go brown and limp. Freeze wrapped in baking paper and foil for up to 2 months and reheat until steaming hot all the way through.
