Method
- 1
Heat the oil in a large frying pan over a high heat. Fry the mushrooms for 6 minutes without stirring too much, until golden and their water has gone.
6 min - 2
Add the onion and garlic and cook for 3 minutes. Season well with salt. Tip into a bowl.
3 min - 3
Warm a dry frying pan over a medium heat. Lay a corn tortilla in the pan, cover half with cheese and a spoon of mushrooms, and fold over.
- 4
Cook for 2 minutes per side, pressing down, until the cheese melts and the tortilla is crisp in places. Repeat.
4 min - 5
Warm your ready made salsa ranchera (see the base recipe) in a small pan. Scatter the coriander over the quesadillas and serve the sauce for dipping.
Tips
- Cook the mushrooms until completely dry or the quesadilla goes soggy.
- Warm the tortillas first so they fold without splitting.
- Add a handful of spinach with the garlic for extra greens.
Storing and freezing
Best eaten hot. Cooled filling keeps in the fridge 2 days. Reheat until steaming hot.
Questions
Which cheese is traditional?
Oaxaca cheese, which melts in long strings. Mozzarella is the best UK swap.
Can I make them dairy free?
Yes, with a dairy free melting cheese, though it will not stretch as much.
