Method

  1. 1

Put the ribs in a large pan, cover with cold water and bring to the boil. Boil for 10 minutes, then drain and rinse the ribs under the tap. This removes scum and gives a cleaner tasting sauce.

    10 min
  2. 2

Whisk the soy sauce, mirin, sugar, sesame oil, garlic, ginger, grated pear, pepper and water in the slow cooker.

  3. 3

Add the ribs and onion and turn to coat. Push the ribs down so they are mostly submerged.

  4. 4

Cover and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the meat is very tender. Add the mooli and carrots for the last 2 hours on low, or the last hour on high.

    450 min
  5. 5

Lift out the ribs and vegetables. Skim as much fat as you can off the surface of the sauce with a spoon. Taste and add a splash of water if it is too salty, or a little more sugar if you want it sweeter.

  6. 6

Return the ribs to the sauce to warm through. Serve in wide bowls with the sauce spooned over, scattered with spring onions and sesame seeds, with steamed rice.
