2 min - 4
Add the rest of the oil and stir fry the onion and carrot for 3 minutes. Add the pak choi and cook for 1 minute.
4 min - 5
Add the udon and the clean marinade with 3 tbsp of water. Toss for 2 minutes until the noodles are glossy and piping hot all the way through.
2 min - 6
Return the beef, toss, and serve topped with spring onions and sesame seeds.
Tips
- Use vacuum packed ready cooked udon. It stir fries well and saves time.
- Do not stir the noodles too much or they break. Toss and fold gently.
- Add a splash of water if the sauce reduces too quickly.
Storing and freezing
Cool within 1 hour and keep in the fridge for up to 2 days. Reheat with a splash of water until steaming hot all the way through.
Questions
Can I make it gluten free?
Udon is made from wheat, so swap it for gluten free rice noodles. The bulgogi marinade is already gluten free.
Can I use chicken or pork?
Yes. Thin strips cook in 4 to 5 minutes. Make sure there is no pink.
Can I make it vegetarian?
Yes. Use pressed firm tofu or sliced mushrooms instead of beef, cooked until golden.
