Method
- 1
Mix half your ready made chipotle adobo sauce (see the base recipe) with the soured cream in a small bowl to make the dip. Keep the other half for the filling.
- 2
Lay 4 of your ready made flour tortillas (see the base recipe) on a board. Spread each with a little chipotle sauce.
- 3
Cover with the ham, then the cheese and a few avocado slices. Top with the remaining tortillas and press down.
- 4
Brush a large frying pan with a little of the oil and heat over a medium heat. Cook each sincronizada for 2 to 3 minutes on each side until golden and the cheese has melted.
5 min - 5
Cut into wedges and scatter with the coriander.
- 6
Serve at once with the chipotle cream for dipping.
Tips
- Use a low moisture cheese such as mozzarella or Monterey Jack. Watery cheese makes the tortillas soggy.
- Press down gently with a spatula while cooking so the cheese glues the layers together.
- Do not overfill. A thin layer of filling melts fast, before the tortilla burns.
Storing and freezing
Best eaten straight away. Cooked sincronizadas keep in the fridge for 2 days and reheat in a hot pan or at {t200} for 8 minutes. The dip keeps for 2 days.
Questions
What is a sincronizada?
A sincronizada is a quesadilla made from two flour tortillas sandwiched around ham and cheese, so the layers are synchronised. It is a common Mexican snack.
Can I use corn tortillas?
Corn tortillas make a classic quesadilla but are too small and brittle to stack for a sincronizada. Flour tortillas work best here.
Can I make it vegetarian?
Yes. Leave out the ham and add sliced mushrooms or beans, and use vegetarian cheese.
