Method
- 1
Crumble the raw chorizo (see the base recipe) into a cold frying pan. Cook over a medium heat for 10 to 12 minutes, breaking it up, until browned, cooked through with no pink and the fat has turned red.
11 min - 2
Meanwhile, warm the refried beans (see the base recipe) in a small pan with a splash of water for 5 minutes until steaming hot all the way through.
5 min - 3
Beat the eggs with a pinch of salt. Push the chorizo to one side of the pan, add the oil, then pour in the eggs.
- 4
Cook over a low heat, stirring gently every 20 seconds, for 2 to 3 minutes until just set and still soft. Fold through the chorizo.
3 min - 5
Warm your ready made corn tortillas (see the base recipe) in a dry pan for 20 to 30 seconds a side.
- 6
Serve the eggs with the beans, avocado, spring onions and lime wedges, and use the tortillas to scoop.
Tips
- Cook the eggs gently. High heat makes them rubbery and dry.
- Take the pan off the heat just before the eggs look set, as they will keep cooking in the hot pan.
- Chorizo fat is the seasoning, so do not drain it away.
- Eat the tortillas as a scoop, or fill them as soft breakfast tacos.
Storing and freezing
Best eaten straight away. Keeps in the fridge for up to 1 day. Cool within 1 to 2 hours and reheat until steaming hot all the way through, once only.
Questions
Can I use shop bought chorizo?
Yes. Fresh Spanish cooking chorizo works, but it is smokier and may contain gluten. Cut it small and fry it until the fat runs.
Can I make it ahead?
Cook the chorizo ahead and keep it in the fridge for 2 days. Scramble the eggs just before serving.
Is this breakfast gluten free and dairy free?
Yes. Chorizo, eggs, beans, avocado and masa harina tortillas contain no gluten or dairy. It is not egg free.
