Method
- 1
Toast the Sichuan and black peppercorns in a dry wok over a medium heat for 1 minute, until they smell warm and spicy. Tip into a mortar, add the salt and grind to a coarse powder.
1 min - 2
Snip down the back of each prawn shell with scissors and pull out the dark vein, leaving the shell on. Pat the prawns very dry with kitchen paper, then toss with the cornflour so each one has a thin even coat.
- 3
Heat the oil in the wok over a high heat until a pinch of cornflour sizzles straight away, about 2 minutes. Fry the prawns in 2 batches for 2 minutes each, until pink and crisp. Lift out onto kitchen paper.
4 min - 4
Carefully pour off all but 1 tbsp of the oil. Return the wok to a high heat and stir fry the garlic, chilli and spring onions for 30 seconds, until fragrant.
0 min 30 s - 5
Add the prawns and the pepper salt and toss hard for 30 seconds so everything is coated. Eat the shells too, they are crisp and full of flavour.
0 min 30 s - 6
Serve straight away with lime wedges and plain rice.
