Method

  1. 1

Make your agua fresca syrup (see the base recipe) in advance and chill it. Put four glasses in the freezer.

  2. 2

Crush the ice finely in a blender in short bursts until it looks like fluffy snow.

  3. 3

Pack the ice into the chilled glasses and pour over 200 ml of the ready made agua fresca syrup (see the base recipe), mixed with the lime juice, in stages.

  4. 4

Top with the strawberries and a pinch of chilli powder if you like.

  5. 5

Serve right away with a spoon and straw.

Tips

  • Crush the ice finely in a strong blender or in a clean tea towel with a rolling pin. Fine snowy ice holds the syrup best.
  • Freeze the serving glasses for 15 minutes so the ice melts slower.
  • Pour the syrup in stages so it soaks through the ice rather than sinking.
  • Add a pinch of chilli powder on top for a Mexican street style finish.

Storing and freezing

Make and eat within 5 minutes. Shaved ice melts quickly and does not store, so do not freeze it again.

Questions

Is a raspado the same as a snow cone?

They are similar. A raspado is shaved or crushed ice flavoured with fruit syrup or fresh fruit, sold across Mexico, often with chilli, salt and lime added.

Can I use a blender?

Yes. Pulse ice cubes in short bursts until fine and snowy. Do not blend for too long or it will melt.

Which syrup flavours work best?

Strawberry, mango, pineapple and watermelon syrups all work well. Add extra lime for sharpness.
