Method
- 1
Warm your ready made arroz rojo (see the base recipe) and your ready made refried beans (see the base recipe) separately in covered pans with a splash of water until steaming hot all the way through, about 6 minutes.
6 min - 2
Warm your ready made flour tortillas (see the base recipe) one at a time in a dry pan for 20 seconds each side, or wrap the stack in a damp cloth and microwave for 30 seconds.
0 min 40 s - 3
Mash the avocados with the lime juice, a pinch of salt and the coriander.
- 4
Lay a tortilla flat. Spread a line of beans down the centre, add rice, sweetcorn, lettuce and a spoonful of avocado. Do not overfill.
- 5
Fold in the sides and roll up tightly. Repeat with the rest.
- 6
Heat the oil in a frying pan over a medium heat. Toast the burritos seam side down for 2 minutes, then turn for 2 minutes until golden and crisp in patches.

Tips
- Warm the tortillas well. Cold flour tortillas crack when folded, warm ones are soft and stretchy.
- To freeze, wrap the filled, untoasted burritos tightly in baking paper and foil once cold. Reheat from frozen at 190C for 35 minutes.
- Add hot sauce or a spoon of salsa roja inside for more heat.
Storing and freezing
Eat within 1 day if kept chilled, or freeze for up to 1 month. Reheat until steaming hot all the way through, once only, because the filling contains rice.
Questions
Can I use shop-bought tortillas?
Yes. Use 8 medium flour tortillas, around 20 cm. Check the label if you need them egg free, dairy free or nut free.
Are these burritos vegan?
Yes, with a vegan arroz rojo made with vegan stock and vegan tortillas. Everything else is plant based.
How do I stop them splitting?
Do not overfill, warm the tortillas first and fold the sides in before rolling, tucking tightly as you go.
