Method

  1. 1

Heat 1 tablespoon of the oil in a pan and fry the onion for 3 minutes. Add the garlic and prawns and cook for 2 to 3 minutes until the prawns are pink all the way through.

    4 min
  2. 2

Stir in the pollo deshebrado (see the base recipe) and 100 ml of the salsa verde (see the base recipe) and cook for 2 minutes until steaming hot. Stir in the coriander and set aside.

    2 min
  3. 3

Warm the corn tortillas (see the base recipe) in a dry pan for 20 seconds each side so they fold without cracking.

  4. 4

Put cheese and the filling over half of each tortilla and fold over.

  5. 5

Brush a clean pan with the remaining oil. Cook the quesadillas, 2 or 3 at a time, for 2 minutes each side until golden and the cheese has melted.

    4 min
  6. 6

Cut in half and serve with the remaining salsa verde for dipping.

Tips

  • Use fresh warm corn tortillas, they fold more easily and do not split.
  • Chop the prawns small so they cook fast and the quesadillas close properly.
  • Do not overfill. About 3 tablespoons of filling for each quesadilla works well.

Storing and freezing

Eat fresh. Cooked quesadillas keep 1 day in the fridge but prawns are best eaten fresh. Reheat until steaming hot all the way through.

Questions

Can I make these dairy free?

Leave out the cheese and use a dairy free cheese or a thick layer of refried beans to hold the filling.

Which salsa verde is best?

The base recipe is a cooked tomatillo salsa. It should be tangy and quite thin, perfect for dipping.

Can I use cooked prawns?

Yes, add them with the chicken for the last minute just to warm through. Overcooking cooked prawns makes them rubbery.
