Method
- 1
Heat 220°C (200°C fan). Heat 1 tbsp oil in a frying pan and cook the onion for 4 minutes. Add the cumin and cook for 30 seconds.
4 min 30 s - 2
Add the chicken, beans and 150 ml of your ready made green enchilada sauce (see the base recipe). Cook for 5 minutes until thick, then stir in half the cheese. Season.
5 min - 3
Warm the flour tortillas (see the base recipe) so they bend. Put a quarter of the filling in the middle of two tortillas stacked together or one for smaller chimichangas.
- 4
Fold in the sides and roll up tightly. Place seam side down on a lined tray and brush all over with the remaining oil.
- 5
Bake for 18 to 20 minutes, turning once, until golden and crisp. Warm the remaining green sauce.
19 min 10 s - 6
Serve the chimichangas with the green sauce poured over, the rest of the cheese, coriander and a spoonful of your ready made guacamole (see the base recipe).
Tips
- Brush generously with oil on all sides for a crisp, deep fried look in the oven.
- Roll tightly and place seam side down so they hold together.
- Add the sauce after baking, not before, to keep the crust crisp.
- For deep fried chimichangas, fry in 180C oil for 2 to 3 minutes a side.
Storing and freezing
Cool within 1 hour and keep in the fridge for up to 2 days. Reheat in a hot oven until crisp and steaming hot all the way through. Freeze unbaked for up to 1 month and bake from frozen for 30 minutes.
