Method

  1. 1

Mix the flour, yeast, 1 tsp sugar and salt in a bowl. Add the warm milk, yoghurt and oil and mix to a dough. Knead for 8 minutes until smooth and soft.

Cover and leave somewhere warm for 1 hour, until doubled.

  3. 3

Meanwhile mix the almonds, coconut, sultanas, 1 tbsp sugar and cardamom with the 2 tbsp milk to make a thick, spreadable paste. Divide it into 6 portions.

  4. 4

Knock back the dough and divide into 6. Flatten one piece into a 10 cm round, put a portion of filling in the middle and pinch the edges together like a purse. Turn seam side down and roll out gently to a teardrop about 20 cm long and 0.5 cm thick. Repeat, then rest for 10 minutes.

  5. 5

Heat a heavy frying pan over a high heat until very hot, with no oil. Cook one naan at a time for about 2 minutes until it bubbles and has dark spots, then flip, cover with a lid and cook for 2 minutes more.

Brush each naan with melted butter and wrap in a clean tea towel to keep them soft while you cook the rest. Serve warm with curry.
