Method

  1. 1

Toast the sesame seeds in a dry wide pan over a medium heat for 4 to 5 minutes, stirring, until they smell nutty and just start to pop. Tip into a bowl. Do not let them brown.

  2. 2

Lightly oil a baking tray or a sheet of baking paper and a rolling pin.

  3. 3

Put the jaggery, water and oil in a heavy pan. Heat gently, stirring, until it melts and bubbles. Cook for 5 to 6 minutes until a drop in cold water sets hard and brittle.

  4. 4

Off the heat, stir in the cardamom and the warm sesame seeds quickly until all coated.

  5. 5

Tip onto the tray and roll thin, about 3 mm, with the oiled pin, working fast before it sets.

  6. 6

Cut into squares or diamonds while it is still warm, then leave to cool for 30 minutes until crisp. Store in an airtight tin.
