Method

  1. 1

Heat the oven to 200°C (180°C fan). Drain and rinse the chickpeas, then dry them thoroughly in a clean tea towel, rubbing off any loose skins.

  2. 2

Spread them on a large baking tray and roast for 10 minutes to dry out further.

  3. 3

Tip into a bowl, toss with the olive oil and taco seasoning mix until every chickpea is coated, then return to the tray.

  4. 4

Roast for another 20 to 25 minutes, shaking the tray every 10 minutes, until deep golden and crunchy.

  5. 5

Tip into a bowl, squeeze over the lime juice, add the zest and salt, and toss. Leave to cool for 10 minutes, as they crisp further as they cool.

Tips

  • Dry the chickpeas well. Any water left on them makes them steam instead of crisp.
  • Add the lime juice at the very end, not before roasting, or they stay soft.
  • Do not cover them once cool. A sealed container traps steam and softens them.
  • Use as a topping for soups, tacos, grain bowls or salads for crunch.

Storing and freezing

Best the same day. Keeps in an open dish at room temperature for 1 day, or in an airtight tin for up to 3 days though they soften. Recrisp in a hot oven for 5 minutes.

Questions

Are crispy chickpeas vegan and gluten free?

Yes. They are made from chickpeas, olive oil, lime and pure spices, so they are naturally vegan, gluten free, dairy free, egg free and nut free.

Why have mine not gone crunchy?

Usually the chickpeas were still damp or the tray was crowded. Dry them very well, spread them in one layer and roast until deep golden.

Can I use dried chickpeas?

Yes. Cook 250 g of dried chickpeas until tender, drain and dry them completely, then roast as above. They will be a little firmer.
