Method

  1. 1

Heat the oven to 220°C (200°C fan) and put a roasting tray in to heat.

  2. 2

Parboil the potatoes in salted water for 8 minutes, until a knife just goes in. Drain and let the steam escape for 2 minutes.

    8 min
  3. 3

Stir your ready made recado rojo (see the base recipe) with the oil, lime juice and salt. Toss the potatoes in it until evenly red.

  4. 4

Tip onto the hot tray in a single layer. Roast for 30 minutes, turning halfway, until crisp and deep orange.

    30 min
  5. 5

Serve with your ready made lime crema (see the base recipe), coriander and lime wedges.

Tips

  • Shake the drained potatoes to rough up the edges. They crisp better.
  • A hot tray stops the potatoes sticking and gives them crunch.
  • Use a dairy free yoghurt with lime in place of the crema for a dairy free side.

Storing and freezing

Eat the same day. Cool leftovers within 2 hours and keep in the fridge for up to 2 days, reheating until steaming hot.

Questions

Is it vegetarian?

Yes. Potatoes, achiote, oil and lime crema contain no meat or fish. Check your crema base ingredients if you follow a strict vegetarian diet.

What goes well with it?

Grilled chicken, fish tikin xic or a simple green salad. It is also lovely as a taco filling.

Can I use larger potatoes?

Yes. Cut them into 3 cm chunks and add 5 minutes to the roasting time.
