Method
- 1
Heat 1 tbsp oil in a large wok over a high heat until it just starts to smoke. Add the cabbage and stir fry for 3 to 4 minutes, until wilted with charred edges.
3 min 30 s - 2
Push the cabbage to the side. Add the remaining oil and the garlic and fry for 20 seconds.
- 3
Pour in the beaten eggs and let them set for 10 seconds, then scramble and fold through the cabbage.
- 4
Add your ready made pad thai sauce (see the base recipe) and toss for 1 minute, until glossy and the cabbage is just tender.
1 min - 5
Scatter over the spring onion and chilli flakes and serve straight away with lime wedges.
Tips
- Keep the heat very high. Cabbage should char and wilt, not steam in its own water.
- Cut the cabbage in thin ribbons so it cooks in minutes.
- Serve alongside grilled meat or fish, or with steamed rice as a quick supper.
Storing and freezing
Best eaten straight away. Keeps 1 day in the fridge, cooled within 1 to 2 hours, and is reheated until steaming hot all the way through.
Questions
Can I use a different cabbage?
Yes. White or Chinese cabbage work well. Cook white cabbage for an extra minute or two, as it is tougher than sweetheart.
Can I leave out the egg?
Yes, for an egg free side. Add a handful of beansprouts or a sliced carrot for extra texture.
What does it go with?
It suits grilled chicken, fried fish or a bowl of plain jasmine rice. It also makes a good filling topped with a fried egg.
