Method
- 1
Mix the flour, yeast, sugar, salt and cinnamon in a large bowl. Beat the egg into the warm milk and pour into the flour.
- 2
Beat with a wooden spoon for 3 minutes into a thick, sticky batter. It should be wetter than bread dough.
- 3
Stir in the raisins, currants and apple. Cover and leave somewhere warm for 1 hour, until doubled and bubbly.
60 min - 4
Heat the oil in a deep heavy pan to 180 C. Use a thermometer, or test that a drop of batter sizzles and rises in a few seconds.
- 5
Dip two large spoons in the hot oil, then scoop golfball sized portions of batter and push them off the spoon into the oil. Fry 4 or 5 at a time for 6 to 8 minutes, turning, until deep golden.
7 min - 6
Lift out onto kitchen paper and check the first one is cooked through in the middle. Dust thickly with icing sugar and serve warm.
