Method
- 1
Cook the rice in plenty of boiling water for 10 minutes. Drain, spread on a tray and leave to cool completely. Cold rice fries best.
10 min - 2
Mix the tamari and sugar in a small cup and stir until the sugar dissolves.
- 3
Heat half the oil in a large frying pan or wok over a high heat. Fry the chicken for 5 minutes until golden and cooked through. Lift out onto a plate.
5 min - 4
Add the shallots, garlic and chilli to the pan. Fry for 2 minutes until soft and fragrant.
- 5
Tip in the cold rice and the chicken. Pour over the tamari mix and stir fry for 4 minutes, until the rice is hot and a few grains turn crisp.
4 min - 6
Push the rice to the side, add a splash of oil and fry the eggs for 2 minutes until the whites are set and the yolks are soft.
- 7
Serve the rice in bowls with an egg on top, the spring onions, cucumber and lime wedges.
