Method

  1. 1

Heat the oven to 200°C (180°C fan). Tip the pollo deshebrado (see the base recipe) and carnitas (see the base recipe) into a pan with 3 tablespoons of water and warm for 4 minutes until steaming hot all the way through.

  2. 2

Spread half the totopos on a large baking tray. Scatter over half the beans, half the chicken and pork and half the cheese. Add the rest of the chips and repeat the layers.

  3. 3

Bake for 8 to 10 minutes until the cheese is bubbling and golden at the edges.

    9 min
  4. 4

Top with the pickled jalapenos, avocado, spring onions and coriander, then spoon over the soured cream.

  5. 5

Serve at once, straight from the tray, so the chips stay crisp.

Tips

  • Layer the cheese and fillings between two layers of chips so more chips are coated, not just the top ones.
  • Use real tortilla totopos from the base recipe or any plain corn tortilla chips that are labelled gluten free if that matters.
  • Add a bowl of guacamole and a green salsa on the side for dipping.

Storing and freezing

Best eaten fresh. Leftover toppings keep 2 days in the fridge. Do not reheat soggy chips, make a fresh tray.

Questions

How do I stop nachos going soggy?

Bake just until the cheese melts, serve straight away and keep wet toppings like soured cream and avocado for after baking.

Can I make them dairy free?

Yes. Leave out the cheddar and soured cream and use a dairy free cheese and dairy free yoghurt if you like.

Can I prepare them ahead?

Warm the meats and prep the toppings ahead, but assemble and bake just before serving.
