Method

  1. 1

Heat the oven to 200°C (180°C fan). Warm your ready made barbacoa beef (see the base recipe) in a pan until steaming hot all the way through. Warm the black beans in a separate pan for 3 minutes.

  2. 2

Spread the broken tostadas over a large baking tray or ovenproof dish. Scatter over the beans and barbacoa, keeping some chip edges uncovered.

  3. 3

Bake for 5 minutes, until the chips are hot and slightly crisper.

    5 min
  4. 4

Meanwhile, warm your ready made queso dip (see the base recipe) in a pan over a low heat, stirring, until smooth and steaming hot.

  5. 5

Pour the queso over the nachos in thick ribbons. Scatter over the tomato, jalapeños, red onion and coriander. Serve straight away with the lime wedges.

Tips

  • Build in two layers if you have a big tray: chips, toppings, chips, toppings. Every chip then gets some flavour.
  • Add the queso at the end. Baked under the oven, it can split and turn greasy.
  • Serve the fresh toppings cold on top so they contrast with the hot beef and queso.

Storing and freezing

Nachos are best eaten straight away. Keep leftover beef and queso separately in the fridge for up to 3 days and reheat until steaming hot all the way through.

Questions

Can I use bagged tortilla chips?

Yes. Use about 200 g of gluten free tortilla chips in place of the broken tostadas. Check the label if you need them gluten free.

How do I keep nachos from going soggy?

Use sturdy chips, drain the beef of excess juices and add the queso and wet toppings just before serving.

Can I make the queso dairy free?

The queso dip base here is dairy based. For a dairy free plate, leave it out and top the nachos with avocado and a cashew-free dairy free cheese sauce, or simply a tub of guacamole.
