Method
- 1
Make your carne asada marinade first (see the base recipe). Put the steak in a dish, pour over 100 ml of the marinade, cover and chill for 2 to 4 hours.
- 2
Heat a griddle pan or heavy frying pan over a high heat. Wipe the excess marinade off the steak, oil the pan and cook the steak for 3 to 4 minutes a side until cooked to your liking. Throw away the used marinade.
7 min - 3
Rest the steak for 5 minutes, then chop it finely.
5 min - 4
Warm your ready made corn tortillas (see the base recipe) in a dry pan for 20 seconds a side. Lay 4 on the work surface and cover each with a layer of cheese, then the chopped steak, then more cheese. Top with a second tortilla.
- 5
Wipe the pan clean, lower the heat to medium and cook each mulita for 2 to 3 minutes a side, pressing down with a spatula, until crisp outside and the cheese has melted.
5 min - 6
Cut into wedges and serve with guacamole, coriander and lime wedges.
Tips
- Chop the steak small so the mulitas stay flat and the cheese holds everything together.
- Press down firmly with a spatula as they cook so the tortillas seal onto the cheese.
- Do not overfill, or the cheese leaks out and burns.
- Serve straight away, as they lose their crispness quickly.
Storing and freezing
Best eaten fresh. Keeps in the fridge for up to 2 days and reheats best in a dry pan until steaming hot all the way through. Do not freeze.
Questions
What is the difference between a mulita and a quesadilla?
A mulita uses two small tortillas with the filling sandwiched between. A quesadilla is usually one folded tortilla. Mulitas are a street food from northern Mexico.
Can I use a different meat?
Yes. Chopped al pastor pork, carnitas or chicken thigh cooked in the same marinade all work well.
Are these gluten free?
Yes. Beef, marinade, cheese and masa harina tortillas contain no gluten or egg. They are not dairy free because of the cheese.
