Method
- 1
Warm your ready made salsa roja (see the base recipe) in a wide pan over a low heat until it just starts to bubble. Keep it warm.
- 2
Heat the oil in a frying pan. Fry the tortillas one at a time for 10 seconds per side, just to soften them, then drain on kitchen paper.
2 min - 3
Dip each softened tortilla into the warm salsa to coat both sides.
- 4
Fill with a spoonful of cheese, fold or roll, and set seam side down in a shallow dish. Repeat with all 12.
- 5
Pour the remaining salsa over the top and scatter with onion slices.
- 6
Drizzle with your ready made lime crema (see the base recipe), then sprinkle with the remaining cheese and coriander. Serve straight away.
Tips
- Do not fry the tortillas long. A few seconds is enough, or they turn crisp and will not roll.
- Keep the salsa warm, not boiling, so the tortillas absorb it without breaking.
- For a meatier version, fill with shredded chicken or add a fried egg on top.
Storing and freezing
Best eaten at once. Leftovers keep 2 days chilled; reheat covered in the oven until steaming hot all the way through.
Questions
What is the difference between entomatadas and enchiladas?
Entomatadas are dipped in a tomato based sauce and are usually milder. Enchiladas use a chilli sauce, red or green, and are often baked.
Can I bake them?
Yes. Cover with cheese and bake at 200C (180C fan) for 12 minutes until bubbling, then add the crema.
Can I make them vegan?
Yes, use a dairy free cheese and a dairy free lime yoghurt instead of the crema.
