Method
- 1
Heat the oven to 220°C (200°C fan). Cut the potatoes into 1cm chips, rinse them under cold water and pat dry well.
- 2
Boil the chips in salted water for 5 minutes, until the edges just soften. Drain and leave to steam dry for 5 minutes.
5 min - 3
Toss the chips with the sunflower oil on two large trays. Roast for 35 to 40 minutes, turning once, until deep golden and crisp.
38 min - 4
Meanwhile, tap any open mussels on the worktop. Throw away any that stay open and any with broken shells.
- 5
Heat the olive oil in a very large pan with a lid. Soften the shallots, celery and garlic for 4 minutes. Pour in the wine, add the bay and boil for 1 minute.
4 min - 6
Tip in the mussels, cover tightly and cook over a high heat for 4 to 5 minutes, shaking the pan, until the shells open. Discard any that stay shut.
5 min - 7
Scatter over the parsley, pour the mussels and juices into big bowls and serve with the chips, lemon wedges and mayonnaise.
