Tips
- Cut the hard vegetables slightly smaller than the soft ones so everything is done together.
- Use any veg that suits you: swap in parsnip, butternut squash or courgette. Add courgette in the last 5 minutes.
- If the sauce is too thick, loosen it with a splash of boiled water.
Storing and freezing
Cool quickly and keep in the fridge for up to 3 days. Freezes for 2 months, though potatoes soften a little. Reheat until steaming hot.
Questions
Is this vegetable korma vegan?
Yes. The korma base uses coconut milk and oil, with no dairy, and the vegetables are plant based.
Can I use frozen mixed vegetables?
Yes. Add them for the last 8 minutes, from frozen, and skip the fresh beans and cauliflower.
How do I make it thicker?
Mash a few pieces of potato into the sauce, or simmer uncovered for 5 minutes at the end.
