Add the lemon juice, taste for salt and scatter over the coriander. Serve with rice or naan.

Tips

  • Turkey is lean and dries out if boiled. Keep the sauce at a gentle simmer and heat it only until hot through.
  • Works for leftover chicken or pork too. Use the same weight.
  • Add a handful of spinach or sweetcorn at the end to use up odds and ends.

Storing and freezing

Use cooked turkey within 2 days of cooking and chill it within 1 to 2 hours. Eat the finished curry within 1 day, reheating only once until steaming hot.

Questions

How long can I keep leftover turkey?

Cool it within 1 to 2 hours of cooking, keep it in the fridge and use it within 2 days. If in doubt, throw it out.

Can I freeze the korma?

Freeze turkey meat on day one or two, not after it has been made into a curry and reheated. The base itself freezes very well.

Can I make this with dark meat?

Yes. Thigh and leg meat stay juicier in the sauce, so it is even better than breast.
