Method
- 1
Oil an 18 cm square tin and line it with baking paper, then oil the paper. Mix the icing sugar and dusting cornflour together and set aside.
- 2
Put the caster sugar, 200 ml water and lemon juice in a pan. Stir until dissolved, then boil without stirring until it reaches 115C on a sugar thermometer, about 10 minutes. Take off the heat.
10 min - 3
In a large, heavy pan, whisk the 100 g cornflour and cream of tartar with 600 ml cold water until smooth. Cook over a medium heat, whisking, until it thickens to a paste.
- 4
Slowly whisk the hot syrup into the paste. Turn the heat right down and simmer for 1 hour, whisking every 5 minutes, until the mixture is golden, glossy and very thick.
60 min - 5
Off the heat, stir in the rose water, a little colouring if you like, and the pistachios. Scrape into the lined tin, level the top and leave uncovered at room temperature for 8 hours or overnight.
- 6
Turn the block out onto the dusting mix, cut into 16 cubes with an oiled knife and toss each cube in the dusting mix. Store in an airtight tin between layers of baking paper.
