Method
- 1
Heat the oven to 200°C (180°C fan). Prick the potatoes with a fork and bake them directly on the shelf for 1 hour, until the skins are crisp and the middles are soft.
60 min - 2
Meanwhile, fry the bacon in a large dry pan over a medium heat for 6 minutes until crisp. Lift out half onto kitchen paper for the topping and leave the rest in the pan.
6 min - 3
Add the butter and onion to the pan and cook gently for 8 minutes, until soft. Stir in the garlic for 1 minute.
8 min - 4
Stir in the cornflour, then add the stock cubes and boiling water a little at a time. Pour in the milk and bring to a simmer.
- 5
Halve the baked potatoes, scoop the flesh into the pan and roughly mash it with a masher, leaving some lumps. Simmer for 10 minutes, stirring often, until thick.
10 min - 6
Take off the heat and stir in half the cheddar and the soured cream. Season with black pepper. Serve topped with the rest of the cheddar, the crisp bacon and spring onions.
