Method

  1. 1

Put the whole damsons and water into a wide pan, cover and cook over a medium heat for 12 to 15 minutes until the fruit is completely soft and the stones have loosened.

    14 min
  2. 2

Press the fruit through a sieve with the back of a spoon, discarding the stones and skins. You should have about 500 g of purée.

  3. 3

Return the purée to the pan with the erythritol, lemon juice, salt and cinnamon. Simmer for 8 to 10 minutes, stirring often, until thick enough to leave a trail on the base of the pan.

  4. 4

Heat the oven to its lowest setting, about 70 degrees C, and line a large baking tray with baking paper.

  5. 5

Spread the purée about 3 mm thick over the paper. Dry in the oven for 4 to 5 hours, until it is no longer sticky when touched and peels easily from the paper.

  6. 6

Cool, then roll up the paper and leather together and cut into strips. Keep in an airtight tin for up to 2 weeks.
