Method

  1. 1

Heat the oven to 180°C (160°C fan). Line a 20 cm square tin with baking paper.

  2. 2

Whisk the eggs and sugar with an electric whisk for 6 minutes until pale, thick and tripled in volume.

  3. 3

Sift in the flour and fold it in gently with a big spoon. Melt the 50 g butter with the milk and vanilla, then fold that in too.

  4. 4

Pour into the tin and bake for 30 minutes until risen and springy. Cool in the tin for 10 minutes, then turn out and leave to go cold. Wrap and leave overnight if you can, as day old sponge is easier to cut.

  5. 5

Cut the sponge into 16 squares. Mix the icing sugar, cocoa, hot water and melted butter into a thin, glossy icing.

  6. 6

Spear each square with a fork, dunk it in the icing, let the extra drip off, then roll in coconut. Leave on a rack to set for 30 minutes.
