Method

  1. 1

Mix the flour, xanthan gum and icing sugar in a bowl. Rub in the dairy free spread with your fingertips until it looks like fine crumbs.

  2. 2

Add the water a tablespoon at a time and bring together into a dough. Wrap and chill for 30 minutes.

  3. 3

Heat the oven to 190°C (170°C fan). Lightly grease a 12 hole bun tin with a little dairy free spread.

  4. 4

Roll the dough between two sheets of baking paper until 3mm thick. Cut 12 circles to fit the holes and 12 smaller lids. Patch any cracks with your fingers, as this dough is delicate.

  5. 5

Put a circle in each hole, add a heaped teaspoon of mincemeat, then top with a lid. Press the edges, brush with oat milk and cut a tiny slit in each lid.

  6. 6

Bake for 20 to 25 minutes until pale gold. Cool in the tin for 10 minutes, then dust with icing sugar.
