Method

  1. 1

Heat the oven to 200°C (180°C fan). Cook the jasmine rice following the packet instructions and keep it covered.

    12 min
  2. 2

Mix the ready made laksa paste (see the base recipe) with the coconut milk, vegetable oil and half the lime juice in a baking dish.

  3. 3

Add the green beans and stir to coat. Bake for 8 minutes.

    8 min
  4. 4

Nestle the cod fillets into the sauce and spoon some sauce over each. Bake for 12 to 15 minutes, until the fish is opaque and flakes easily and the sauce is bubbling.

    14 min
  5. 5

Squeeze over the remaining lime juice and scatter with coriander.

  6. 6

Serve with the rice and lime wedges, spooning the sauce over everything.

Tips

  • Pat the fish dry first so the sauce clings rather than turning watery.
  • Check the thickest part of a fillet. It should be opaque all the way through and flake easily.
  • Swap cod for haddock, pollock or salmon, adjusting the time by a few minutes.

Storing and freezing

Keep in the fridge for up to 1 day and reheat until steaming hot all the way through. Fish is best eaten fresh, so avoid freezing this dish.

Questions

Can I use frozen cod?

Yes. Defrost it fully in the fridge overnight and pat very dry before baking.

Can I bake it in foil parcels?

Yes. Seal each fillet with sauce in foil and bake for 18 to 20 minutes. Open carefully because the steam is very hot.

Is it dairy free?

Yes, it uses coconut milk and no dairy, and the whole dish is also gluten free and nut free.
