Method

  1. 1

Cut the core out of the cabbage with a small knife. Lower the whole cabbage into a big pan of boiling salted water and simmer for 8 to 10 minutes, peeling off the outer leaves with tongs as they soften. Keep going until you have 12 big leaves. Drain, and shave down any thick central ribs so the leaves roll easily. Chop the leftover cabbage roughly.

  2. 2

Mix the pork with the cauliflower rice, onion, spring onions, dill, parsley, mint, 2 tablespoons of the oil, the salt, pepper and 1 egg. Mix well with your hands.

  3. 3

Put about 3 tablespoons of filling near the base of a leaf. Fold in the sides and roll up tightly, like a small parcel. Repeat with the rest.

  4. 4

Line a wide heavy pan with the chopped cabbage. Pack the rolls in snugly, seam side down. Add the water, the rest of the oil and the juice of 1 lemon. Put a small plate on top to keep them from unrolling. Cover and simmer very gently for 45 minutes.

  5. 5

Whisk the 2 remaining eggs with the juice of the second lemon until frothy. Slowly ladle in about 150 ml of hot liquid from the pan, whisking all the time so the eggs do not scramble.

  6. 6

Pour the sauce back into the pan, tilt and swirl it round the rolls, and heat very gently for 2 minutes without boiling. It will thicken slightly. Serve warm.
