Method

  1. 1

Mix the flour, yeast, caster sugar, cardamom and salt in a large bowl. Add the warm milk, egg and soft butter and bring together into a sticky dough.

  2. 2

Knead for 10 minutes on a lightly floured surface until smooth and stretchy. Put in an oiled bowl, cover and leave for 1 hour until doubled.

  3. 3

Mix the very soft butter, brown sugar and cinnamon into a spreadable paste.

  4. 4

Roll the dough out to a 40 x 50cm rectangle. Spread with the filling right to the edges. Roll up from the long side into a tight log.

  5. 5

Cut the log into 12 triangular wedges, so each is wide on one edge and pointed on the other, then stand each on its point and press the top down with your thumb so it splays out like an ear. Place on two lined trays. Cover and leave for 30 minutes.

Cool on a rack for 10 minutes. They smell wonderful and are best eaten the same day.
