Method

  1. 1

Grind the cashews in short pulses in a dry food processor to a fine powder, like flour. Stop before it turns oily. Sift to remove any chunks.

  2. 2

Heat the sugar and water in a non stick pan, stirring, until dissolved. Simmer for 5 to 6 minutes until the syrup is sticky and a drop pressed between finger and thumb forms a single thread.

  3. 3

Turn the heat to low. Tip in the cashew powder and cardamom and stir constantly for 5 to 7 minutes until the mixture leaves the sides of the pan and forms a soft, non sticky dough.

  4. 4

Stir in the ghee and rose water. Tip onto a sheet of baking paper and let it cool for 5 minutes until warm enough to handle.

  5. 5

Knead briefly until smooth, then roll out between two sheets of baking paper to about 4 mm thick.

  6. 6

Leave for 20 minutes to firm up, then cut into diamonds with a sharp knife. Keeps in an airtight tin for 5 days.
