Method

  1. 1

Melt the ghee in a heavy frying pan or wok over a low heat. Add the gram flour and stir.

  2. 2

Keep cooking on a low heat for 15 to 20 minutes, stirring all the time, until the flour turns a deeper golden colour, loosens and smells toasted and nutty. Do not rush it, raw gram flour tastes bitter.

  3. 3

Take off the heat and spread onto a plate. Leave to cool for 10 minutes until warm but not hot.

  4. 4

Stir in the powdered sugar, cardamom and salt. If it is too hot the sugar will melt and the ladoo will be sticky.

  5. 5

Squeeze handfuls of the mixture in your palms and roll into 14 balls about the size of a walnut. If it will not hold together, work in a teaspoon of warm melted ghee.

  6. 6

Leave to set for 20 minutes. They keep in a tin for a week.
