Method

  1. 1

Heat the oil in a pan over a high heat and brown the beef in two batches for 3 to 4 minutes each. Add 250 ml of your ready made onion gravy (see the base recipe) and 100 ml water.

    8 min
  2. 2

Cover and simmer very gently for 1 hour 15 minutes, until the beef is tender and the sauce is thick. If it is runny, simmer uncovered for a few minutes.

  3. 3

Tip the filling into a bowl and cool completely, about 1 hour. Chill in the fridge. Stir in the raw diced potato and swede.

  4. 4

Heat the oven to 200°C (180°C fan). Roll out your ready made shortcrust pastry (see the base recipe) and cut four 20 cm circles. Spoon the filling on one half of each, brush the edge with egg, fold over and crimp firmly.

  5. 5

Put the pasties on a lined baking tray, brush with beaten egg and cut a small steam slit in each.

  6. 6

Bake for 20 minutes, then turn the oven down to 170°C (150°C fan) and bake for 25 minutes more, until deep golden and piping hot inside.

    45 min
  7. 7

Cool for 10 minutes before eating.

Tips

  • Cool the filling fully before filling the pastry. Hot filling melts the fat and makes the pastry greasy.
  • Keep the diced potato and swede small so they cook through in the oven.
  • A firm crimp keeps the gravy in. Brush the edge with egg to help it seal.

Storing and freezing

Cool within 2 hours and keep in the fridge for up to 3 days. Freeze baked pasties for up to 3 months. Reheat from chilled in a hot oven until steaming hot all the way through.

Questions

Can I freeze unbaked pasties?

Yes. Freeze them on a tray, then bag. Bake from frozen at 180C for about 1 hour, until piping hot all the way through and golden.

Can I make these gluten free?

Only if your shortcrust pastry is made with gluten free flour. The onion gravy is already gluten free but standard pastry is not.
