Method
- 1
Warm your ready made barbacoa beef (see the base recipe) in a small pan until steaming hot all the way through. Drain off most of the juices.
4 min - 2
Beat the eggs with the milk and a pinch of salt in a bowl until just combined.
- 3
Melt the butter in a large non stick frying pan over a low to medium heat. Pour in the eggs and stir slowly with a spatula for 2 to 3 minutes, until softly set.
2 min 30 s - 4
Fold in the barbacoa and half of your ready made pico de gallo (see the base recipe). Take off the heat while the eggs are still a little glossy, as they continue to cook.
- 5
Warm the tortillas in a dry pan for 20 seconds per side. Serve the eggs with the tortillas, avocado, cheese, the remaining pico de gallo and lime.
Tips
- Cook scrambled eggs low and slow for soft curds. Take them off while they still look slightly wet.
- Pat the barbacoa dry so the eggs do not turn watery.
- Spoon the remaining pico over just before eating so it stays fresh and sharp.
Storing and freezing
Eat straight away. Scrambled eggs do not reheat well. Keep leftover barbacoa and pico de gallo separately in the fridge for up to 3 days.
Questions
Is this a traditional dish?
Eggs scrambled with leftover meat, tomato, onion and chilli are a classic Mexican breakfast, known as huevos a la mexicana when made with chopped tomato, onion and green chilli. Barbacoa is a natural addition.
Can I make it dairy free?
Yes. Cook the eggs in sunflower oil, use a splash of water instead of milk and leave out the queso fresco. The beef and pico de gallo are dairy free.
What can I serve with it?
Warm corn tortillas, refried beans and a hot salsa. A small cup of coffee goes well too.
