Method

  1. 1

Warm the mole poblano (see the base recipe) with 50 ml water in a small pan, stirring, until loose and steaming. Heat the refried beans (see the base recipe) in another pan until hot, adding water if stiff.

    5 min
  2. 2

Warm the corn tortillas (see the base recipe) in a dry frying pan for 20 seconds a side. Keep warm in a clean tea towel.

  3. 3

Heat the oil in a frying pan over a medium-high heat. Crack in the eggs and fry for 2 to 3 minutes until the whites are set and the edges are crisp, with the yolks as runny or firm as you like.

    3 min
  4. 4

Spread each tortilla with a spoonful of beans. Top with a fried egg, then spoon mole around the egg, not over the yolk.

  5. 5

Finish with queso fresco, avocado and coriander and eat while hot.

Tips

  • Spoon the mole beside the egg so the yolk stays bright and the white stays crisp.
  • Cook eggs until the whites are fully set if serving to young children, the elderly or anyone pregnant.
  • Use hot oil for the crisp lacy edges that give these eggs their name.

Storing and freezing

Best eaten straight away. Keep leftover mole in the fridge for up to 4 days and leftover beans for up to 3 days; do not store the cooked eggs.

Questions

Is mole for breakfast normal in Mexico?

Mole is more often a lunch or celebration dish, but leftover mole is often used the next morning with eggs, in chilaquiles or over tortillas. This recipe takes that idea and builds a proper plate.

Can I make this vegan?

Swap the eggs for fried or scrambled tofu, leave out the queso fresco and use extra avocado. The mole, beans and tortillas are already vegan.
