Method

  1. 1

Marinate the steak in your ready made carne asada marinade (see the base recipe) for 2 to 6 hours in the fridge. Discard the used marinade.

  2. 2

Pat the steak dry and sear in a very hot pan for 3 minutes each side. Rest for 5 minutes and chop small.

  3. 3

Warm the corn tortillas (see the base recipe) in a dry pan so they bend without cracking. Put steak and cheese along the middle of each, roll tightly and secure with a cocktail stick.

    2 min
  4. 4

Heat the oil in a deep frying pan to 180 C. Fry 4 flautas at a time for 2 to 3 minutes, turning, until golden and crisp. Drain on kitchen paper.

    3 min
  5. 5

Serve on a bed of lettuce with salsa verde (see the base recipe), crema and radish.

Tips

  • Warm the tortillas well or they crack when rolled.
  • Roll tightly and fry seam side down first so they hold together.
  • Test the oil with a small piece of tortilla. It should sizzle and turn golden in 30 seconds.

Storing and freezing

Best eaten straight away. Leftover flautas keep in the fridge for up to 2 days and should be crisped in a hot oven until steaming hot all the way through.

Questions

What is the difference between flautas and taquitos?

They are very similar. Flautas are usually longer, made with larger tortillas, while taquitos are shorter and thinner. Names vary by region.

Can I bake them?

Yes. Brush with oil and bake at 220 C (200 C fan) for 15 to 20 minutes, turning once, until golden. They are less crisp than fried but lighter.
