Method
- 1
Sift the icing sugar and cornflour together. Oil a 20 cm square tin, line it with baking paper and dust it generously with the mix.
- 2
Pour 120 ml of the cold water into the bowl of a stand mixer and sprinkle over the gelatine. Leave it to go spongy.
- 3
Put the sugar, golden syrup, salt and the other 120 ml water in a heavy pan. Stir until dissolved, then boil without stirring until a thermometer reads 115C.
7 min - 4
With the mixer on low, slowly pour the hot syrup in a thin stream down the side of the bowl. Turn up to high and whisk for 10 to 12 minutes until white, thick and tripled in volume. Add the vanilla.
12 min - 5
Scrape into the tin with a wet spatula and smooth the top. Dust with more of the mix.
- 6
Leave for at least 6 hours, uncovered, until set. Cut with an oiled knife or scissors and coat every side in the dusting mix.
