Method
- 1
Mix the garlic, cumin, oregano, 1 tbsp of the oil, the lime juice and the salt. Rub it all over the lamb and leave for 15 minutes at room temperature.
15 min - 2
Warm your ready made green enchilada sauce (see the base recipe) in a small pan on a low heat. Warm your ready made frijoles de la olla (see the base recipe) in another pan until steaming hot all the way through.
- 3
Heat a heavy frying pan or griddle until very hot. Sear the cutlets for 3 minutes a side for pink, or 4 minutes for medium to well done. Rest on a warm plate for 5 minutes.
6 min - 4
In the same pan, char the spring onions with the remaining oil for 3 to 4 minutes, turning, until blackened in places.
3 min 30 s - 5
Mash a few of the beans roughly and stir back in so the broth thickens a little.
- 6
Spoon the beans onto plates, rest the cutlets on top, spoon over the green sauce and add the charred spring onions.
Tips
- Rest the cutlets after searing. The juices settle and the meat stays tender.
- Do not marinate with the lime juice for more than 30 minutes or the surface of the meat turns mealy.
- Lamb cutlets cook fast, so have the sides ready before the pan is hot.
Storing and freezing
Eat straight away. Cool leftovers within 2 hours and keep in the fridge for up to 2 days, reheated until steaming hot all the way through.
Questions
Can I grill or barbecue the chops?
Yes. Grill over a hot flame for 3 to 4 minutes per side. Rest before serving. The charred edge goes well with the tangy sauce.
What should I serve with the lamb chops?
Rice, warm corn tortillas, sliced avocado or a simple tomato and onion salad all suit this dish.
Is this dish dairy free?
Yes. It has no dairy, egg, gluten or nuts, as long as the sauce and beans were made without any.
