Method
- 1
Squeeze the drained jackfruit hard in a clean tea towel to remove water. Cut out the hard core pieces and shred the rest with two forks.
- 2
Heat the olive oil in a large frying pan over a medium high heat. Fry the jackfruit for 5 minutes, stirring now and then, until it starts to colour.
5 min - 3
Stir in your ready made al pastor marinade (see the base recipe) and 50 ml water. Cook for 10 minutes, stirring, until the jackfruit is glossy, sticky and slightly charred in places.
10 min - 4
Stir in the pineapple and cook for 2 minutes more. Taste and add a squeeze of lime.
2 min - 5
Spread each tostada with a spoonful of guacamole, then heap on the jackfruit.
- 6
Top with sliced red onion and coriander and serve straight away with lime wedges, so the tostadas stay crisp.
Tips
- Buy young green jackfruit in water or brine, not in syrup. Syrup jackfruit is sweet and ruins the flavour.
- Squeezing the jackfruit dry is the key step. It lets the marinade cling and the edges crisp.
- Assemble each tostada at the last minute, because moisture softens the crisp base within minutes.
- Add a few slices of pickled jalapeño for sharp heat.
Storing and freezing
Keep the cooked jackfruit in the fridge for up to 3 days and reheat in a pan until steaming hot all the way through. Tostadas should be topped just before eating. The jackfruit freezes for up to 2 months.
Questions
Is this vegan and gluten free?
Yes. Jackfruit, guacamole, tostadas made from corn and the marinade are vegan, gluten free, dairy free, egg free and nut free. Always check the tinned jackfruit label for added sauces.
Can I use fresh jackfruit?
Tinned young green jackfruit is easier and more reliable. Ripe fresh jackfruit is sweet and does not shred the same way.
Can I use tortillas instead of tostadas?
Yes. Pile it into warm corn tortillas for tacos instead. The jackfruit filling works the same way.
