Method
- 1
Whisk the flour, eggs, 250 ml milk, oil and salt into a smooth thin batter. Leave it to rest while you make the filling.
- 2
For the filling, warm the 100 ml milk and sugar in a small pan until the sugar dissolves. Stir in the walnuts, raisins, rum and lemon zest and simmer for 3 minutes until thick and spoonable. Leave to cool a little.
3 min - 3
Heat a non stick frying pan over a medium heat and brush with a little oil. Pour in a thin layer of batter, tilt to cover the pan and cook for 1 minute each side. Repeat to make 8 pancakes, stacking them as you go.
- 4
For the sauce, warm the cream in a small pan until steaming. Take it off the heat, add the chocolate and stir until smooth and glossy.
- 5
Spoon the walnut filling along the middle of each pancake and fold in the sides to make a parcel or roll.
- 6
Serve 2 pancakes per person with the warm chocolate sauce poured over. For a show, warm a spoonful of rum, set it alight with care and pour it over at the table.
