Method
- 1
Mix the goat with the yoghurt, ginger, garlic, ground coriander, ground cumin and salt. Leave for 30 minutes. Soak the saffron in the warm milk.
30 min - 2
Melt the ghee in a heavy casserole over a medium heat. Add the cinnamon, cardamom, cloves and bay for 30 seconds, then the onions. Cook gently for 15 minutes, stirring, until soft and pale gold, not brown.
15 min - 3
Add the goat and marinade and green chillies. Cook for 10 minutes, stirring, until the yoghurt has reduced and clings to the meat.
10 min - 4
Pour in the hot water, bring to a simmer, cover and cook on low for 1 hour 30 minutes, until the goat is tender. Lamb shoulder needs about 1 hour.
90 min - 5
Stir the ground almonds into the cold water to make a paste. Stir it into the curry with the saffron milk and simmer uncovered for 10 minutes, until the sauce thickens.
10 min - 6
Add the cream, white pepper and lemon juice and warm through for 3 minutes without boiling hard. Taste for salt and serve with rice or naan.
