Method
- 1
Heat the oil in a frying pan and add the mustard seeds. When they pop, add the curry leaves and cook for 20 seconds.
0 min 20 s - 2
Stir in your ready made curry base sauce (see the base recipe), the tomato and the desiccated coconut. Simmer for 6 minutes until very thick, then add the prawns and cook for 2 minutes.
6 min - 3
Take off the heat, stir in the lime juice and coriander, and cool completely. The filling must be thick and dry enough to hold.
- 4
Heat the oven to 200°C (180°C fan). Roll out your ready made shortcrust pastry (see the base recipe) and cut 4 circles about 18 cm across, using a plate as a guide.
- 5
Spoon filling onto one half of each circle, brush the edges with egg, fold over and crimp firmly. Place on a lined tray, brush with egg and make a small slit.
- 6
Bake for 25 to 30 minutes until deep golden and piping hot inside. Rest for 5 minutes.

Tips
- Reduce the sauce well before adding the prawns. A wet filling will leak and make the pastry soggy.
- Chop the prawns small so the pasties cook through and bite cleanly.
- Serve with a fresh mint and coriander chutney or lime pickle.
Storing and freezing
Keep in the fridge for up to 2 days and reheat at 180C (fan 160C) for 15 minutes until steaming hot through. Unbaked sealed pasties freeze for 1 month.
Questions
How spicy are these?
Medium to mild, depending on your curry base sauce. Add a finely chopped green chilli to the filling for more kick.
Can I use fish instead of prawns?
Yes. Use 300 g firm white fish such as cod or haddock, cooked and flaked in the sauce for 3 minutes. Handle gently so the flakes stay large.
Can I use cooked prawns?
Yes, add them at the end and heat for 1 minute only, as cooked prawns turn tough if heated for long.
