  3. 3

Mix the coconut yoghurt with the lemon zest, 1 tbsp lemon juice and a pinch of salt.

  4. 4

Warm your ready made tarka dal base (see the base recipe) in a pan with a splash of water until steaming hot all the way through.

  5. 5

Spoon the dal into bowls, top with cauliflower, a spoon of yoghurt and the coriander.

Tips

  • Use a big tray so the cauliflower roasts instead of steams.
  • Dry the florets well after washing.
  • Add a handful of chickpeas to the tray for extra protein.

Storing and freezing

Cool within 1 to 2 hours and keep in the fridge for up to 3 days. Freeze for up to 3 months. Reheat until steaming hot all the way through.

Questions

Can I use broccoli or romanesco?

Yes. Broccoli roasts in 20 to 25 minutes.

Can I make it ahead?

Make the dal ahead. Roast the cauliflower fresh for the best texture.

Is it vegan?

Yes, with coconut yoghurt it is vegan and free from gluten, dairy, egg and nuts. Check the yoghurt label.
