Method
- 1
Grease a baking tray and a sheet of baking paper with the butter. Have a sugar thermometer ready, and use a wide, heavy pan at least 3 litres in size.
- 2
Put the milk, sugar, golden syrup, bicarbonate and salt in the pan. Heat gently, stirring until the sugar dissolves, then bring to a steady simmer.
- 3
Cook for about 70 to 80 minutes over a medium low heat, stirring often and more often towards the end, until it is thick, deep golden brown and leaves a trail when you drag the spoon through. It should reach about 115 C.
75 min - 4
Take off the heat, stir in the vanilla and pecans and beat with a wooden spoon for 1 to 2 minutes until it thickens a little more.
- 5
Working quickly, spoon tablespoon-sized rounds onto the greased tray, flattening each to a disc about 5 cm wide with the back of a greased spoon. If it firms up in the pan, warm it briefly.
- 6
Leave to cool and set for 1 hour. Wrap each in a small square of baking paper. They keep for a week in an airtight tin.
