Method
- 1
Peel and chop the potatoes. Boil in salted water for 15 minutes until a knife slides in easily. Drain well and mash until completely smooth.
15 min - 2
Let the mash cool for 10 minutes. Stir in the plain flour, rice flour, sugar, salt and water. Knead briefly into a soft, slightly sticky dough.
- 3
Mix the mozzarella, brown sugar and cinnamon in a small bowl. Divide the dough into 6 balls.
- 4
With oiled hands, flatten each ball in your palm. Put a spoonful of the cheese mix in the middle, fold the dough around it and pinch closed to seal.
- 5
Heat 1 tablespoon of oil in a large non stick frying pan over a medium heat. Add 2 balls, seam side down, and cook for 2 minutes until golden underneath.
2 min - 6
Flip, press each flat with an oiled spatula to about 1.5 cm thick and cook for 3 minutes more, turning once, until deep golden and crisp. Repeat with the rest, adding oil each time.
3 min - 7
Rest for 2 minutes, as the filling is very hot. Eat straight away while the cheese is stretchy.
